- 3 lbs oxtails
- 2 tbsp garlic paste
- 2 tbsp sofrito
- 1 tbsp oregano
- 1 tsp sazon
- 1 tbsp black pepper
- 2 tbsp soy sauce
- 2 tbsp oil I used Achiote oil
- 2 tbsp tomato paste
- 1/2 red bell pepper
- 1/2 cubanelle pepper or green bell
- 1/2 red onion
- Bunch of fresh cilantro
- Hot sauce to taste
- 2 oz cognac or any dark liquor
- 1-2 cups of water
- 1 tbsp Chicken Bullion Powder
The Night Before
Clean your oxtails
Add all seasonings & oils - mix
Add Tomato Paste - mix
Add onions, peppers and cilantro - mix
6..Optional - add hot sauce and or cognac
Marinate Overnight
The Day Of
Pre-heat oven to 325 degrees
Remove the oxtails from the fridge - let them rest at least 30 mins
Add to baking dish
Pour one cup of water over the oxtails
Cover with aluminum foil and bake for 2.5 hours
Remove foil and bake for another 30 mins.
