Ingredients
  

  • 3 lbs oxtails
  • 2 tbsp garlic paste
  • 2 tbsp sofrito
  • 1 tbsp oregano
  • 1 tsp sazon
  • 1 tbsp black pepper
  • 2 tbsp soy sauce
  • 2 tbsp oil I used Achiote oil
  • 2 tbsp tomato paste
  • 1/2 red bell pepper
  • 1/2 cubanelle pepper or green bell
  • 1/2 red onion
  • Bunch of fresh cilantro
  • Hot sauce to taste
  • 2 oz cognac or any dark liquor
  • 1-2 cups of water
  • 1 tbsp Chicken Bullion Powder

Instructions
 

  • The Night Before
  • Clean your oxtails
  • Add all seasonings & oils - mix
  • Add Tomato Paste - mix
  • Add onions, peppers and cilantro - mix
  • 6..Optional - add hot sauce and or cognac
  • Marinate Overnight
  • The Day Of
  • Pre-heat oven to 325 degrees
  • Remove the oxtails from the fridge - let them rest at least 30 mins
  • Add to baking dish
  • Pour one cup of water over the oxtails
  • Cover with aluminum foil and bake for 2.5 hours
  • Remove foil and bake for another 30 mins.
