Ingredients
- 3 lbs oxtails
- 2 tbsp garlic paste
- 2 tbsp sofrito
- 1 tbsp oregano
- 1 tsp sazon
- 1 tbsp black pepper
- 2 tbsp soy sauce
- 2 tbsp oil I used Achiote oil
- 2 tbsp tomato paste
- 1/2 red bell pepper
- 1/2 cubanelle pepper or green bell
- 1/2 red onion
- Bunch of fresh cilantro
- Hot sauce to taste
- 2 oz cognac or any dark liquor
- 1-2 cups of water
- 1 tbsp Chicken Bullion Powder
Instructions
- The Night Before
- Clean your oxtails
- Add all seasonings & oils - mix
- Add Tomato Paste - mix
- Add onions, peppers and cilantro - mix
- 6..Optional - add hot sauce and or cognac
- Marinate Overnight
- The Day Of
- Pre-heat oven to 325 degrees
- Remove the oxtails from the fridge - let them rest at least 30 mins
- Add to baking dish
- Pour one cup of water over the oxtails
- Cover with aluminum foil and bake for 2.5 hours
- Remove foil and bake for another 30 mins.
